PROFILE ROASTING
Coffee profiles are all created using Ikawa sample roasters. This roaster gives a specific profile for each coffee that can be replicated over multiple roasts. Coffee is an agricultural product and changes over time, and after roasting. Many characteristics live within the green coffee bean, and this process is designed to bring them all out.
PRODUCTION ROASTING
Once the best roast profile is found for a lot, the profile is transferred to 10KG drum roasters. This allows for a consistent matching of profiles from lot to lot. The result is the freshest, small batch, craft roasted coffee available.
Cinnamon Roast (350°F):
Color: Light brown, reminiscent of cinnamon.
Description: At this stage, the beans are still brown (not green), having just cracked open due to heat exposure. The result is a delicate roast that preserves the bean’s original characteristics. Expect a subtle sweetness and a light body in your cup of coffee.
Blonde Roast (350°F – 375°F):
Profile: Light.
Attributes: Natural sweetness with a gentle body.
Light City Roast (375°F – 400°F):
Profile: Light.
Flavor Notes: Flavorful, with low bitterness. It’s like a morning stroll through a New England town, where every sip tells a story.
Half City Roast (401°F):
Profile: Light.
Characteristics: Tangy, fruity, and high in caffeine. Imagine a lively dance of flavors on your taste buds.

City Roast:
Temperature Range: Typically roasted between 415°F and 425°F.
Description: City roast coffee is a medium-to-dark roast that emerges just after the first crack begins (around 395°F to 405°F). Also known as New England roast, it boasts a more pronounced flavor compared to lighter roasts. Imagine sipping a cup of coffee that captures the essence of a vibrant city awakening in the morning.
Regular Roast:
Temperature Range: Falls within the medium roast category.
Characteristics: Regular roasts are what the average American coffee drinker is accustomed to. They reach internal temperatures of 410°F to 428°F, right after the first crack and just before the second one occurs. These roasts offer a balanced flavor profile, with a touch more body than light roasts and less acidity. Think of it as your reliable, everyday cup of joe.
American Roast:
Temperature Range: Also part of the medium roast spectrum.
Flavor Notes: American roast coffee shares similarities with regular roasts. It reaches internal temperatures similar to those of regular roasts (around 410°F to 428°F). Expect a well-rounded cup with moderate acidity and a satisfying body. It’s the quintessential choice for many coffee lovers across the United States.
Medium roasts provide a delightful middle ground, offering a flavorful experience without overwhelming intensity. Whether you’re enjoying a City Roast, Regular Roast, or American Roast, each sip tells a story of balance and warmth.
Viennese Roast:
Temperature Range: Roasted to an internal temperature of 437°F – 446°F.
Description: Viennese roast dances on the edge of darkness, just after the second crack. The beans begin to reveal their oils on the surface. Expect a full-bodied cup with a rich, bittersweet tang and subtle hints of chocolate and caramel. It’s like sipping coffee in a cozy Viennese café.
Continental Roast:
Temperature Range: Similar to Viennese, reaching 437°F – 446°F.
Characteristics: Continental roast exudes a robust flavor, often accompanied by a touch of spiciness. The oils emerge, contributing to a heavier mouthfeel. Picture yourself enjoying this brew in a bustling European city square.
Full City Roast:
Temperature Range: Also within the medium-dark spectrum.
Flavor Notes: Full City strikes a harmonious balance. Origin flavors shine through, acidity is tempered by a complex sweetness, and the cup feels juicier. It’s equally delightful as a drip or filter coffee.
Light French Roast:
Temperature Range: Roasted to 437°F – 446°F or just after the second crack.

Light Espresso Roast:
Temperature Range: Similar to the others, around 437°F – 446°F.
Espresso Delight: Light espresso roast offers a bold, yet nuanced experience. It’s perfect for pulling shots of espresso with a balanced crema.
Medium-dark roasts bring depth, body, and complexity to your cup. Whether you’re savoring a Viennese, Continental, Full City, Light French, or Light Espresso, each sip tells a story of roasted perfection.
French Roast:
Temperature Range: Roasted to a point where the beans become very dark brown or black.
Description: French roast is bold and robust. The beans develop a thin layer of oil on their surface. Expect an intense, smoky flavor with minimal acidity. It’s like sipping coffee by the Seine River in Paris.
Espresso Roast:
Temperature Range: Similar to French roast, reaching around 464°F – 482°F.
Characteristics: Espresso roast is tailor-made for pulling shots of espresso. It’s dark, rich, and concentrated. The oils on the beans contribute to a creamy crema and a full-bodied texture.
Turkish Roast:
Temperature Range: Traditionally roasted for Turkish coffee.
Flavor Notes: Turkish roast is exceptionally dark, almost black. It’s ground to a fine powder and brewed in a special pot. The result is a strong, unapologetically bold cup with a thick sediment at the bottom.
Italian Roast:
Temperature Range: Roasted to a similar level as French and Espresso roasts.
Profile: Italian roast is intense and full-flavored. It’s often used for making cappuccinos and lattes. The oils are visible on the beans, and the taste is rich and satisfying.
Dark French Roast:
Temperature Range: Continues roasting for a few minutes after the second crack.
Characteristics: Dark French roast is deep, dark, and brooding. The oils are abundant, and the beans reach temperatures between 464°F and 482°F. It’s the epitome of boldness.
Heavy Roast:
Temperature Range: Similar to the others, around 464°F – 482°F.
Intensity: Heavy roast lives up to its name. It’s for those who want their coffee to pack a punch. The oils glisten, and the flavor is powerful and robust.
